the color of September #4 – a toasted tomato sandwich

Of all the produce of September, I think I enjoy tomatoes the most. I like fried green tomatoes, tomatoes in chili con carne and toasted tomato sandwiches. If you have never eaten a toasted tomato sandwich, you should try one. Toast two pieces of whole wheat bread, slice the tomatoes very thin and add mayo, salt and pepper.

Now that I have finished my watercolor of tomatoes, and they are no longer needed for the still life, I think I’ll have another sandwich …

Beautiful painting, Jane. I had to come see this post right away because I just had a toasted tomato sandwich for lunch. It’s one of my favorite sandwiches. My husband is partial to potato bread so we made ours on potato bread today. Sometimes I use rye or whole wheat.

Hi. I just had another for lunch. Someone told me tomatoes are bad for my arthritis, but I just keep on eating them! Jane

I’ve heard that about all nightshades. I thought about giving them up, but I can’t imagine giving up tomatoes, and they’re just the tip of the nightshade iceberg. Potatoes, peppers, eggplant… too many good foods.

Agree. I tried giving up tomatoes and potatoes for a month. Probably not long enough to see any effects. Jane
